There are several different types of Carrot 

Orange Carrot

The most common type of is the orange carrot, which is known for its sweet and earthy flavour. They are typically long and tapered, with a bright orange colour. This type  are available year-round and are perfect for roasting, steaming, and adding to salads and soups.

Purple Carrot

Another popular variety is the purple carrot. Compared to orange carrots, purple carrots have twice as much alpha- and beta-carotene, which the body converts to vitamin A. They also add a vibrant colour to any dish.

Yellow Carrot

Yellow carrots are a variety  that are grown for their sweetness, firm texture, and earthy flavour. They have a firm and crunchy texture, an earthy sweet flavour with notes of celery and parsley. They are yellow all the way through.

Red Carrot

Red carrots are narrow to conical in shape tapering to a point on the stem end. The skin is smooth, firm, and ranges in colour from red, maroon, to red purple.
The flesh under the surface is crisp, orange to pale yellow. Red carrots are dense with a higher water content than most orange carrot varieties.

White Carrot

White carrots are crisp and sweet, with an apple-like texture. Despite their color and shape white carrots are not to be confused with parsnips. Although parsnips are also root vegetables, they are not part of the same family.

Baby Carrots

Baby carrots are simple regular orange carrots that are harvested before reaching their maturity. Although they are whittled down into smaller shapes people tend to remark they taste a little different. They wouldn’t be wrong. That’s because they are less sweet than their big brothers.
